Introduction

Homemade Tomato Sauce with Lentils

Was working on a sauce that is low in sodium, and calories, but still good tasting. I served this over a half cup of Whole Wheat Pasta (spirals in this case).

This is also a very good source of Potassium!!
Homemade Tomato Sauce with Lentils

Was working on a sauce that is low in sodium, and calories, but still good tasting. I served this over a half cup of Whole Wheat Pasta (spirals in this case).

Number of Servings: 2

Ingredients

    4 Medium Tomatoes
    1 tsp Minced Garlic
    1/2 cup chopped Onion
    1 tbsp Extra Virgin Olive Oil
    1/2 cup Water
    1/2 cup Lentils cooked
    1/2 tsp Oregano
    1 tsp Basil
    1 tsp Mrs. Dash Original Seasoning
    1 tsp Black Pepper

Directions

Cook Lentils as per package instructions, it is important that Lentils are fully cooked prior to making rest of recipe.

Prep sauce pan with olive oil, then add chopped onions and garlic. Cook until Onions are cooked through about 4-5 minutes on medium heat.

Meanwhile slice up tomatoes and place in blender and frape' until thoroughly mixed. Add spices and mix well.

When onions are cooked, add tomato mixture and bring to a boil. Reduce heat and simmer.

Put Lentils in blender with water and blend well.

***Blending Lentils is not necessary, for a more red sauce, just stir in cooked lentils and water***

Add to tomato sauce and continue cooking mixing frequently.

Spoon onto your favorite pasta.

Serves 2

*serving suggestion: I like to put some Parmesan Cheese on when complete.
