Introduction

Ingredients

Ingredients:
2 pounds skinless boneless chicken breast halves
1 can (16-oz size) pineapple chuncks, drained
1 can (15 oz size) mandarin oranges, drained
1/4 cup cornstarch
3 Tbsp brown sugar, packed
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground (or finely chopped) ginger
1/4 cup soy sauce
10min brown or white boil in a bag rice
Directions
Combine all ingredients up to rice in the crockpot.
Cook low 7-8 hours, or high 4-5.
Remove Chicken and set aside.
Drain liquid into a bowl through a strainer, reserve liquid in bowl. Return pinapple and orange tidbits to crockpot to sit. (crockpot off now)
Place boil in a bag rice in the liquid, you can do up to two bags if you want, and cover with wrap. Place in microwave for 10 min.
Remove from microwave, pull out rice and add it to the pinapple/oranges and mix.
Place remaining sauce in a gravy boat. (you may thicken on stove if you want, I just served it thin)
Serve sauce with chicken.
I serve this meal with snow peas or edemame.....
(Do not put rice in)
