Ingredients

    Ingredients
    2 cups rolled oats, (not quick-cooking)
    1/2 cup whole-wheat flour
    1 teaspoon ground cinnamon
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup peanut butter
    2 tbsp oil
    2 tbsp light brown sugar
    1/4 pumpkin, canned
    1 tablespoon vanilla extract
    1/4 cup dates, chopped
    1/2 cup raisins
    1/4 cup chopped walnuts

Directions

1.Position racks in upper and lower thirds of oven; preheat to 350°F. Line 2 baking sheets with parchment paper.
2.Whisk oats, whole-wheat flour, all-purpose flour, cinnamon, baking soda and salt in a medium bowl. Beat peanut butter and oil in a large bowl with an electric mixer until creamy. Add brown sugar; continue beating until well combined. Beat in pumpkin, then vanilla. Stir in the oat mixture with a wooden spoon until just moistened. Stir in chocolate chips and walnuts.
3. press evenly onto 8x8 baking sheet until edges turn golden brown. Cut into 16 bars.

    Is that 1/4 CUP of pumpkin, you didn't specify. And what are the baking sheets for? And I assume you add the dates and raisins when you add the walnuts. - 2/28/11
