Introduction
I copied this recipe from about.com, the only difference is that I halved the amounts called for and when I cooked my roast I left out the cup of chicken broth and 1/4 tsp. pepper (by accident), so I left those out of the ingredients too. I found the meat and vegetables to be tender and flavorful without the two missing ingredients, but feel free to add them if you would like. This dish is actually a little higher in fat than I had anticipated, but it is not too bad. Ingredients

* 1.5 lb. boneless pork sirloin roast
* 1/2 Tbsp. olive oil
* 3 - 4 wedges of acorn squash
* 1sweet potato, peeled
* 1/4 cup apple butter
* 1.5 Tbsp. prepared horseradish
* 1/2 Tbsp. cornstarch
* 1/4 tsp. ground allspice
* 1/2 teaspoon dried thyme leaves
Directions
Heat oil in a heavy skillet and cook pork roast until browned on all sides, turning occasionally. This should take about 10 minutes. While that's cooking, cut the acorn squash into wedges and remove seeds. Do not peel. Peel sweet potatoes and cut into chunks. Place squash and sweet potatoes in 3-4 quart slow cooker. Top with browned pork roast.
In a small bowl, mix together apple butter, horseradish, cornstarch, allspice, (pepper, chicken broth,) and thyme. Pour into slow cooker.
Cover crockpot and cook on low for 7-9 hours until pork and vegetables are tender. 4 servings
