Ingredients

Filling
2 cups cooked chicken, cubed
2 carrots, chopped
1 stalk celery, large, sliced
1 potato with skin, cubed
1 med onion, diced
1 can Cream of Chicken soup, low sod & low fat
1 cup chicken broth
1/4 cup fat free greek yogurt
1/4 tsp each sea salt & pepper
Topping
3/4 cups each of whole wheat and white flour
1 1/2 tsp baking powder
1/2 tsp sea salt
1 tsp dried thyme
1 1/2 tbsp shortening
1 cup 2% milk
1 tsp lemon juice
Directions
Mix all filling ingredients together in 2qt baking dish.
Mix lemon juice with milk (or just use buttermilk if you have it). Whisk dry topping ingredients together then cut in the shortning until crumbly. Add milk mixture, stir until just combined. Drop dough on top of filling in 6 even portions.
Bake in 400 degree oven approximately 30-40 minutes. Let cool 10 mins before serving.
