My take on Thai Red curry My take on Thai Red curry
Number of Servings: 4

Ingredients

    2 Chicken Breast
    1 Tablespoon Thai Red Curry Paste
    1 Tablespoon Vegetable Oil
    3 Scallions
    2 Tablespoons of minced Garlic
    2 Tablespoons of Creamy Peanut Butter
    1 Pack of thawed frozen Brocoli
    1/2 a can of Coconut Milk
    1 cup of sliced Mushrooms


    One Cup equals one serving

Directions

1. Cut up chicken breast into chunks.

2. Heat oil in sauce pan.

3. Combine chicken breast, brocoli, and mushrooms in sauce pan; cook for 20 minutes constantly stirring.

4. While chicken, brocoli, and mushrooms are cooking, place peanut butter and water in small bowl and microwave for 30 seconds. Blend red curry paste, warm water, and peanut butter into a smooth texture.

5. Combine the liquid with the chicken, mushroom, and brocoli. Mix the items together. Then mix in the coconut milk.

6. Serve over brown rice, whole grain pasta, or with couscous.

    Awesome!! This was so tasty. I did a little adding and subtracting. I used a red and green bell pepper instead of the broccolli and used sesame oil to saute the garlic before adding the chicken. I also used the full can of coconut milk.And I added 1 Tbls of fish sauce. Great recipe to build on. - 6/28/11

    fantastic,, not sure when u putthe garlic in or where the water come from but i added a small cup of water with the peanut butter, and i also added the garlic aswell when i was blending the red curry paste water and peanut butter, it tasted fantastic, def do it again,, mmmmmmmmm - 4/1/11

    I plan to try this today, but wanted to let people know to never cook raw chicken and veggies together. Its a sure fire way to get salmonella poisoning. Very unsafe. And for your nutritional calculations...what size are your chicken breasts? - 3/25/10
