Introduction

Number of Servings: 4

Ingredients

    1 tbsp olive oil
    2 medium shallots
    1 small red onion
    1 yellow pepper
    1 red pepper
    6 cloves of garlic
    1/2 small purple top turnip
    1/2 cup green beans
    6oz cubed beef
    1 cup chicken stock
    1 can fire-roasted tomatoes
    1/2 cup dry quinoa
    1/3 cup pre-soaked kidney beans
    2 tbsp balsamic vinegar
    1/4 cup red wine
    1 cup water
    Spices: rosemary, parsley, sage, tarragon, black pepper
    4 oz feta cheese

Directions

Put a bit of oil in the bottom of the crockpot (4-5 quart size)
Chop and add shallots, red onions, garlic, yellow and red peppers
Add all remaining ingredients except for feta cheese
Spice to your taste
Cook on low for 6 hours

Top with feta just before serving.

This comes out quite sweet, so if you don't like that, be aware!
