Ingredients

2 heads of baby bok choy, roughly chopped
1 package dried oyster mushrooms ( or 2 oz fresh oyster mushrooms)
6 oz bean sprouts
2 carrots, peeled and chopped
1 onion, peeled and chopped
1 stalk of lemongrass, chopped
3 scallions, chopped
2 cloves garlic, minced
1 pound of steak (I used some NY strip we had in the freezer), sliced
3 tblsp. sesame oil
Sauce: 1.5 cups of water
2 tbsp. aji-mirin
2 tbsp. soy sauce

Directions
Chop your vegetables and reconstitute your mushrooms while heating your wok over high heat. Save the water from the mushrooms - it will be used later.
Heat your sesame oil in the wok and then add the beef, stir-frying until browned, then add the garlic, onions and carrots. Cook until tender, then add the lemongrass, scallion, bok choy, and mushroom.
Stir fry until the bok choy begins to wilt, then add the mushroom water, mirin, soy, and salt to taste.
Serve over rice
