Ingredients



    * Tomato Paste, 1 can (6 oz)
    * *Swanson Natural Goodness Chicken Broth, .5 cup
    * Water, tap, .5 cup
    * Garlic, 1 clove
    * Parsley, dried, .5 tsp (or Basil)
    * Oregano, ground, .25 tsp
    * Salt, .25 tsp
    * 93% Lean Ground Beef, 16 oz
    * Oats, 1 cup
    * Egg substitute, liquid (Egg Beaters), .25 cup
    * Zucchini, 0.5 cup, shredded

Directions

Preheat oven to 350. Combine puree, broth, water, spices, garlic and salt in small sauce pan, simmer 15 minutes. Set aside.

Mix remaining ingrediants, and add 1/2 cup of tomato mixture in a large bowl. Mix well. Shape into loaf, and place into ungreased 8x4 loaf pan. Bake 45 minutes. Discard any drippings. Pour 1/2 cup of tomato mixture onto loaf- bake another 15 minutes.

Place on serving platter. Cool 10 minutes before slicing. Serve with remaining tomato sauce on the side. Serves 8.

    Incredible!
    In made a couple of alterations of my own and have made this multiple times now. I use all water instead of chicken broth to lower the sodium for DH. I have also used the crumbs from shredded wheat instead of oats and it turns out real good every time! Great for meat loaf sandwiches! - 6/10/11
