Ingredients

    2 cups shredded cheddar cheese
    2 lbs tater tots (1 bag)
    6 slices bacon cooked and crumbled
    1/2 cup minced onion
    1/4 cup diced bell pepper (optional)
    1/4 - 1/2 cup mushrooms, sliced or canned (optional)
    1 t parsley flakes
    1 t salt
    1/2 t pepper
    8 large eggs
    1 1/2 cups 2% milk
    1/8 t garlic powder

Directions

cook and crumble bacon. Use just a little of the grease to grease a 13x9 casserole dish.
Add tater tots, bacon, salt, pepper, onion, garlic, peppers, mushrooms to pan. Stir well to mix.
scramble together the eggs and milk. Pour over top of casserole.
Top with cheese, then sprinkle parsley on top.
Bake at 375 for 45-55 minutes until lightly browned and set in the middle.
Makes 12 decent sized portions.
