Introduction

Adaption from Bon Appetit, Dec 2002 "Chicken and White Bean Chili"; this recipe uses ground turkey and canned beans, reduces the chili powder and cumin by 1/2 and eliminates the hot pepper sauce. Ingredients

    1 pound ground turkey 93% lean
    1 large onion, chopped
    1/3 cup all purpose flour
    4 cups chicken broth
    3 cups half and half
    1 can white navy beans, or small white beans, drained
    1 can (4.5 oz) chopped green chilies, drained
    1/2 tbsp chili powder
    1/2 tbsp ground cumin
    1/2 tsp white pepper
    2 cups grated mexican blend cheese
    1 cup sour cream

    Optiopnal ingredients not included in calorie calculation
    Chopped fresh cilantro
    1 tbsp hot pepper sauce
    Purchased tomatillo or green chili salsa


Directions

Saute turkey and onions in large pot over medium heat, about 15 minutes. Add flour and stir 5 minutes (do not brown). Gradually whisk in chicen broth and half and half. Simmer gently until thickened, about 10 minutes. Add white beans, chopped green chilies, and the next 3 ingredients. Simmer, about 20 minutes. Add grated cheese and sour crean; stir until cheese melts (don't boil).
Garnish with cilantro and green salsa. 10 - 12 servings.
