Introduction
From the LDL book. I have modified it somewhat: I omit the olives and add more mushrooms and beef and spices. The pinto beans amp up the carbs and keeps you feeling full longer. I also like the high protein value. You can also substitute ground turkey for the lean sirloin, but I think the flavor is diminished. From the LDL book. Ingredients

1 T. Olive Oil
1 medium yellow onion, chopped (1 cup)
3 small cloves garlic, crushed
1 red bell pepper, medium diced (or green or a combo)
1 pound lean ground sirloin (or ground turkey)
2 packs (8-oz) sliced button mushrooms
1 tsp paprika
2 T. dried basil
1 T. dried oregano
1 t. salt
1 12-oz can diced tomatoes
1 12-oz can tomato sauce
1 regular can pinto beans, undrained
Directions
The nutritional values I used translates to 5 servings
Heat olive oil on medium/high heat in a large deep saucepan.
Add onion, garlic, peppers, and paprika.
Saute for 1-2 minutes to blend.
Add sirloin, and continue sauteing until meat is cooked.
Add mushrooms, and cook for a couple more minutes.
Add tomatoes, tomato sauce, salt and herbs.
Cover and bring to a slow boil.
While it is cooking, puree the beans with their liquid in a blender.
Add the bean puree and, optionally, 1.5 C. water to pot.
(I don't add the water because I prefer a really thick soup).
Stir until well blended.
You can also add black olives (1/2 cup, drained), but this recipe does not include the nutritional values for that.
You can also add some skim mozzarella to the top - give it 20-30 seconds in the microwave to melt it.
