I love creamy recipes and this stroganoff is a tried and true recipe delivering a creamy chicken sauce with ample mushrooms, onions and chicken. Ingredients

2 Chicken Breasts (no skin) Cubed (chicken tenders will work too)
1 can of Healthy Request Cream of Chicken Soup
4 oz. Non-fat greek style yogurt
2 cups Medium Grain white rice
1 tsp of Garlic
2 cups of sliced mushrooms
1 cup of diced onion
1 cup of low sodium, 98% fat free chicken broth
3.5 oz. dry white wine
Directions
This recipe serves 4. Depending on how much rice you prefer, you may choose to increase the amount of rice to a greater amount and adjust the nutrients accordingly.
1. Generously spray Pam in your skillet and sautee onions. If you need more moisture add 1-2 Tablespoons of the chicken broth.
2. Add garlic and let it cook for a few minutes, but be careful not to burn as that will make the garlic bitter.
3. Add mushrooms and chicken to onions and give it one more good Pam spray. Cook until the chicken is done.
4. Add the cream of chicken soup, 3/4 of the remaining chicken broth and heat thoroughly. Pepper to taste. Sometimes, I add a couple of dashes of hot pepper sauce.
5. Use remaining broth to thin as desired.
6. Stir in yogurt and heat for a couple of minutes.
Serve with rice. I usually also serve it with a salad. If you like curry spice, you can add some curry for a different flavor.
