Number of Servings: 12

Ingredients

    20 oz. lean ground turkey breast
    1 - 1.25 oz. taco seasoning mix
    1 - 14.5 oz. can mexican diced tomatoes
    1 - 15.2 oz. black beans
    1 - 15.2 oz. can whole kernel corn
    1 - 5.5 oz. can tomato juice
    120 g. onions
    136 g. celery
    1 - 6.5 oz. can mushrooms
    8 oz. water

Directions

Brown the turkey and drain all fat. Add diced onions and celery. Put remaining ingredients in the soup pot. Do NOT drain any of the cans. Bring the soup to a boil, reduce heat and simmer for 2 hours.
