Ingredients

    1 large english cucumber - large dice
    5 roma toamatoes- large dice
    1 red or orange pepper - large dice
    1/2 cup thinly sliced red onion
    1 clove garlic (optional)
    2 tsp olive oil
    3 oz grated feta cheese
    1 tbsp fresh oregano
    1 lemon juiced
    salt and ground black pepper to taste


Directions

combine all ingredients, season to taste and top with calamata olives if you have them. (optional) not included in the nutritional analysis
