Ingredients

1-lb round steak (pounded thin)
1 egg mixed with water
1/2-tsp salt
1/2-tsp garlic powder
1/4-tsp black pepper
1/4 cup flour (for dredging)
nonstick vegetable spray
1-Tbsp Extra Virgin Olive Oil
1-Tbsp Water
~Gravy~
2-Tbsp flour
1/2 cup water
1/2 cup skim milk
Directions
Makes 4-4oz Servings
1) Cut away fat from steak, remove bone, cut into 4 pieces
2) Beat egg with water until lemon-colored
3) Combine salt, garlic powder, and pepper. Sprinkle seasonings on both sides of steaks
4) Dredge in flour and shake off excess; dip in egg and again in flour
5) Heat large skillet, spray well with nonstick vegetable spray, and add extra virgin olive oil
6) Brown both sides of meat, turning only once. Reduce heat to low. Cook for 10-15 minutes until juices run clear. Add 1-Tbsp water to skillet, cover and cook for 5 minutes
7) Remove steak to heated plate. Add 2-Tbsp flour to drippings; when light brown, stir in water and milk mixing until it thickens into a gravy
8) Return steaks to skillet; simmer gently until ready to serve
