Number of Servings: 6

Ingredients

    1 whole chicken
    3 red potatos, quartered
    2 baking potatos, quartered
    1 c. baby carrots
    1 c. diced celery
    1 onion, chopped and quartered
    3 cloves garlic, minced
    .5 c. chicken broth
    1 tbsp olive oil
    1 tbsp paprika
    salt & pepper to taste

Directions

Makes 6 servings with a 5lb chicken

1. Remove skin and innards from chicken, rinse under cold water and pat dry with paper towels
2. Rub both sides chicken with olive oil, cover with salt, pepper, and paprika
3. [optional] Place chicken in slow cooker with broth. Cook on high for 1-2 hours.
4. Remove chicken, place vegetables in bottom of slow cooker, set chicken on top.
5. Cook 6-8 hours on low, depending on size of chicken. Avoid over-cooking, as this will make the chicken dry out.

    The veggies are FANtASTIC but the chicken was a little dry. Maybe submerge the entire chicken in the broth. - 2/10/10
