Introduction

Stuffed Peppers with vegetables and rice Stuffed Peppers with vegetables and rice
Number of Servings: 10

Ingredients

    5 Medium/Large Peppers
    1 tbs minced garlic
    1C Dry long grain brown rice- yielding approx 2c cooked
    1/2 c shredded cabbage
    1/2c shredded zucchini
    1/2 tsp basil
    1/2 tsb oregano
    1 tsb parsley
    1 medium onion cut in fine peaces
    1/2 lb ground sweet sausage
    1/2 lb ground beef
    1/2c shredded carrot
    1 28oz can of diced tomatoes
    Salt and pepper to taste
    1tbsp Soy sauce

Directions

Brown the meats, cook the rice, cut your Pepper's in 1/2 (unless you want them whole) - recipe is for a 1/2 pepper

In seperate saucepan combine all your vegetables with a just enough olive oil so they don't stick. sautee for 3- 5 min, add meat and rice.

Bake on 350 for 25-35 min, until your peppers are of desired tenderness.

    Sounds good but there is no rice in the ingredients, so not sure what the carb count would be. - 2/9/10

    OOPS.. I forgot the most important part! I used 1 1/2c of cooked whole grain brown rice.
