Ingredients

    3 hard boiled, eggs, whites only
    8 oz extra firm organic tofu
    1/2 c chopped vidalia onion
    1/2 c chopped celery
    1/2 chopped sweet red pepper
    1/2 c. lite mayo
    2 tbsp dijon mustard
    1/4 tsp paprika
    salt and pepper to taste

Directions

finely chop egg whites and tofu. Add remaining ingredients and mix well. refrigerate aty least an hour before using to make sandwiches or wraps
