Ingredients

    1 cup whole wheat flour
    1 tsp ground cinnamon
    1 tsp. baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 cup packed light brown sugar
    1/4 cup unsweetened applesauce
    2 egg whites
    2 tbsp butter or margerine ( i calculated with butter)
    1 1/2 tsp vanilla
    1-1/3 cups uncooked old fashioned or quick oats
    1 cup raisins

Directions

preheat oven to 375 degrees
lightly spray cookie sheets w/ nonstick spray
combine flour, cinnamon, baking powder, baking soda, and salt in medium bowl; mix well.
Combine brown sugar, applesauce,egg whites, butter, and vanilla in large bowl. mix until small crumbs form. add flour mixture; mix well. Blend in oats and raisins.
Drop by rounded teaspoonfuls onto prepared cookie sheets, 2 inches apart. Bake 10 to 12 min or until golden brown. cool on wire racks. makes 3 1/2 dozen cookies.

    I made this recipe this morning. I used white flour with a spoon full of flax meal. They turned out well. I would make them again. - 2/11/10
