Ingredients

    2 tbsp olive oil
    1 medium onion, chopped
    1.5 lbs chicken breasts cut into strips
    6 oz Fage Greek yogurt
    1/4 cup Dijon mustard
    1 cup fat free chicken broth
    Salt and pepper to taste
    Parsley, chopped for garnish (optional)

Directions

Heat the oil in a skillet and add the onion. Sautee until browned about 5-10 minutes. Add the chicken, season with salt and pepper and brown on both sides. Reduce heat and let cook for 10 minutes, stirring occasionally. In the meantime, whick together the yogurt, mustard and broth. Pour over chicken and simmer for 10 minutes. Make sure the sauce does not boil or the yogurt will curdle. Serve over brown rice or with mashed potatoes/cauliflower.

    Easy and quick and absolutely delicious! Because I can't have vngear, I used mustard seeds (both ground and whole) and lemon juice instead of the Dijon mustard and it came out great! - 3/7/10

    I made this tonight for dinner and it was just delicious! I love the tangy taste. It tasted like something I would have eaten before - but just have tons more calories. Definitely will be making this time and time again!! - 3/2/10

    I'll try anything with greek yogurt and Dijon mustard. This sounds so good!
