Introduction

Fool-proof, quick and easy, this majorly low-cal soup impresses every time. Fool-proof, quick and easy, this majorly low-cal soup impresses every time.
Number of Servings: 6

Ingredients

    1 head of broccoli
    1/2 head of cauliflower
    2 teaspoons powdered chicken stock
    6 cups water
    1 teaspoon crushed chilli
    Spices of choice

Directions

Chop up the broccoli and cauliflower, then place all ingredients in a big pot. Cook for around half an hour, to 3/4 of an hour until vegies are soft. Use a potato masher to mash them up, and serve.

I use various spices each time I make this soup, one of my favourite combinations is coriander, cinnamon and tumeric, but you can experiment and see what you like best.

Serves 6 - freezes very well too.

    I put broccoli and cauliflower in the blender and it has a wonderful mashed potato flavor. Top with a slice of low fat cheese and you are in heaven. - 12/1/09

    Yummy! I used cinnamon/coriander/tumeric also added rosemary, parsley, garlic pdr, celery salt, bay leaf, cayenne and no chicken pdr or cube. Added 3 small new potatoes too. Used potato masher. - 8/20/10

    Very Good, but calories and nutrients such as potassium and vitamin C are more than double for the ingredients listed. One bunch broccoli + plus 1/2 head cauliflower = approximately 300 calories for the 6-serving recipe. That's about 50 calories per serving, not 19.9 calories. - 2/4/13

    Tasted really great. I added a pinch of nutmeg and 1/4 tsp oregano. Instead of chicken stock I used vegetable stock and finished it off with 1 tsp light sour cream. I used my hand blitzer instead of the masher. We just loved it. - 4/16/11

    I made this soup and loved it - but added 2 small triangles of laughing cow cheese to make it creamier - and just used some salt and pepper, and a bit of nutmeg. But I think I am going to add different spices each time I have a bowl and see what happens! - 3/7/11
