Introduction

Ingredients

    *Butterball italian turkey sausage, 32 oz
    Onions, raw, 1 large chopped
    Celery, raw, 1 stalk, large chopped
    Carrots, raw, 2 large chopped
    Swanson Chicken Broth 99% Fat Free, 12 cups
    Fire Roasted Red Peppers, 2.5 cups diced
    Garlic, 2 cloves
    Lentils, 2 cups cooked
    Basil, 2 tbsp
    Oregano, ground, 2 tsp
    Parsley, 1 tbsp
    Thyme, ground, 1 tbsp
    black pepper, 1 tsp
    crushed red pepper flakes

Directions

Brown sausage and drain off any excess fat. Add celery, garlic, onions and carrots to pot, and cook untio tender. Add broth,roasted red peppers and rest of herbs and seasoning to soup, Cook until warm.

    Made as directed. I'm thinking the herb measurements were for fresh herbs? I used dried and felt they were way overboard in the amounts. Other than that the soup is tasty and low enough in calories that it can be used as a snack. - 8/23/10

    This is almost my exact recipe but I like the crushed red pepper. If someone's looking for high protein, low fat, and easy, this is your recipe. - 7/6/10
