Ingredients

3 cups of gluten free baking mix, I used Pamela's Baking and Pancake Mix (if you use a mix without leavening, add 1 tsp each of baking powder, baking soda, and xantham gum)
1 cup unsweetened cocoa powder
1 cup fresh blueberries
1 medium banana
1 cup of pitted dates
1 cup milk or substitute, I used unsweetened, chocolate, Almond Breeze
2 tbsp water
2 tsp vanilla
2 tbsp olive oil
2 eggs, separated
Directions
Preheat oven to 375F
Mix together baking mix and cocoa in a large bowl
Process the blueberries, banana, dates until smooth (can add milk substitute here or the 2 tbsp water to help blend effectively or help remove from mixing container. I used a smoothie maker to blend these.)
Mix the fruit blend, milk substitute, vanilla, water, olive oil, and egg yolks in with the flour and cocoa
Whip the egg whites until frothy, then fold them into the mix
Spread into a 9x12 pan and bake at 375F for 25-30min or until toothpick comes out clean.
