Ingredients

Olive Oil, 1.5 tbsp
Onions, raw, .5 large
Swiss Chard, 3 cup, chopped
Mushrooms, fresh, 226 grams
Zucchini, baby, 2 medium
*Black Pepper (Ground), 0.25 tsp
Egg, fresh, 2 large
egg white, fresh, 4 large
Feta Cheese, .125 cup, crumbled
Parmesan Cheese, shredded, 1 tbsp
dash salt optional
Directions
cut up vegetables sautee veggies in olive oil over low heat until limp and onions are transparent. 7-10 minutes
pour off excess liquid. beat eggs and egg whites in bowl. add pepper and dash salt. mix in feta. let stand 5 miniutes.
put veggies in in 8x8 baking dish. pour egg mixture over veggies. mix gently. top with parm cheese.
bake at 350 for 35-40 minutes or until eggs are set.
to reheat, microwave on med 2-3 min and then on high for 30-45 sec.
