Introduction

This is my adaptation of a recipe a Rwandan family taught me. They used chunks of stewed beef instead of venison, but venison is what I had in my freezer; hence the swap. :) It's delicious, and if the idea of adding peanut butter weirds you out, no worries. It adds creaminess to the dish, but you don't taste it and think, "Tastes like PB&venison." :) It is not eaten from a bowl like soup; rather, it is ladled over rice and eaten with a spoon. Ingredients

    1 T olive oil
    .5 C chopped onion
    1 lb. ground venison (or meat of your choice)
    1.5 C fresh spinach (more is ideal, but that is all I had)
    2 C tomato sauce
    rounded .25 C peanut butter

Directions

Fry the onion in the oil. When onion is soft, add meat. Break up meat and cook until browned. Then add spinach and stir until wilted. Next, add tomato sauce. Be sure to scrape up any browned bits from the bottom of the pan. Simmer a few minutes, then add in peanut butter, stirring well until all the peanut butter is mixed in. May serve immediately or leave to simmer a couple minutes more. Serve over rice. (Try grating carrots into the rice before cooking it - delicious Rwandan method!) Makes 4 servings.

    Different and Delicious! Quick and easy to make, the peanut butter really adds a unique and delightfully creamy twist. Surprisingly filling! DH didn't finish his portion; I think that may be a first! I will definitely make this again! - 9/17/12
