Introduction

Ingredients

Non-stick spray
1 bag frozen three pepper and onion blend
4 oz smoked turkey sausage
4 oz shredded pepper jack cheese, divided
2 lg eggs
6 lg egg whites
4 tbsp salsa (optional, included in NI)
Directions
Preheat oven to 400.
Heat a cast iron or other oven safe skillet over med-high heat. Spray with non-stick spray. Satue pepper and onion blend until lightly golden and all water is gone.
Add sausage, cook until lightly browned. Spread evenly over bottom of skillet.
Sprinkle with half the cheese.
Pour eggs over top and let cook for about 2-3 minutes for bottom to set.
Place skillet into preheated oven and cook for about 20 minutes or until set and no longer runny.
Top with remaining cheese and bake until cheese is golden and bubbly.
Cool slightly and serve or freeze.
Serve topped with salsa.
