Introduction

I like to make a large batch and use leftovers for sandwiches or salads. Much lower in sodium than what you'll find in the store! I like to make a large batch and use leftovers for sandwiches or salads. Much lower in sodium than what you'll find in the store!

Ingredients

4.5 lbs Boneless Skinless Chicken Breast (about 5 breasts)
    1 Tbsp White Balsamic Vinegar
    1 tsp Lime Juice
    1.5 Tbsp Olive Oil
1 Tbsp Mrs. Dash Garlic & Herb Seasoning Blend
    1.5 Tbsp Italian Seasoning
    2 tsp Garlic Powder
    2 tsp Poultry Seasoning

Directions

Serving size is 4 oz of cooked chicken.
Makes about 16 servings.

Preheat oven to 350.

Tear foil to fit each of the breasts. Place each breast in it's own foil. Mix remaining ingredients. Cover top side of each breast using a basting brush. Fold foil to seal and place on a large sheet pan.

Bake in oven 30-40 minutes depending on the size of the chicken breasts. Remove from oven and allow to rest for 10 minutes.

Serve these with any low sodium side. I like to use the same mixture to brush over potatoes that have been cut in to wedges and roast. Place the potatoes in the oven 15 minutes prior to putting the chicken in the oven.

    Good
I need low sodium receipes, but certainly don't need 16 servings even to freeze, I live alonel So I took this "idea" used some of the ingredients and made something similar. I did not have "white" balsimic vinegar so used what I had, no lime juice. will have to enter my receipe if it taste good - 5/13/10
