Introduction

This is a really yummy and Very easy dinner. This is a really yummy and Very easy dinner.
Number of Servings: 2

Ingredients

    4 oz mushrooms, sliced
    1/2 of medium onion, chopped
    medium tomato, chopped
    1 cup black beans, cooked or rinsed well if canned
    1.5 cups cooked whole wheat pasta
    4 Tbsp Trader Joe's Corn and Chile Salsa

Directions

Makes 2 servings.

Cook pasta per directions and drain when done. I do not add salt or oil to pasta, if you do please change the nutritional value.
Sautee mushrooms just until starting to soften, add choped onion, continue to sautee, add black beans, add tomatoes. These can all be added at desired time depending on how well you like your veggies cooked. I cooked the veggies and beans for about 8 minutes, then added the tomatoes for about 2 minutes.
Divide pasta between two bowls, put veggies on top of your pasta, add 2 Tbsp corn salsa.
