Introduction

Both vegan and a raw food recipe, this zuccini hummus was a big hit with my kids at home! A great vegetable based snack, use raw veggees to dip (I like celery) or pile on a romaine or endive leaves and top with veggees for a healthy lunch. Ingredients

    1 medium zuccini, washed and chunked (1 cup)
    2 Tablespoons tahini
    2 Tbs fresh lemon juice
    1/4 tsp each: cumin, paprika
    1 garlic clove (or 1tsp minced)
    sea salt to taste

Directions

Toss all the ingredients in a mini food processor or blender, blend until smooth and creamy and ENJOY!

I did not have tahini and used almond butter as a substitution. Any nut butter could be substituted, but if you buy tahini try using it on toast or spread over whole wheat pancakes and enjoy!
