Introduction

This is a great post workout meal (especially if you don't like protein shakes). I also use this meal for lunches. You can switch things up by replacing the celery with cucumbers. Or adding on stalk of chopped celery right into the chicken salad and eating it on crackers or in a wrap etc. This is a great post workout meal (especially if you don't like protein shakes). Ingredients

    4 celery stalks
    4 oz of Chicken cooked breast (about half a large breast of one small one), chopped into small pieces
    1 green onion, thinly sliced
    1.5 - 2 tbls reduced fat or fat free mayo
    1 tsp dijon mustard (optional)
    salt to taste
    pepper to taste

Directions

Throw the chopped chicken pieces and green onion into a bowl. Add the mayo, dijon mustard if using and mix until well combined. Add Salt and pepper to your taste preferences. Spread mixture on the celery sticks and cut into thirds.

Serve immediately or store in airtight container in the refrigerator.

Makes one meals size serving or 2 snack sized servings
