The best scrambled egg substitute I have had so far. You can roll this mixture into a tortilla wrap like a burrito or eat it on it's own with some toast.

Number of Servings: 4

Ingredients

    1 tbsp Olive oil
    1 onion, peeled and chopped
    3 cloves garlic, minced
    3 1/2 cups tofu
    3 tbsp Nutritional (inactive) yeast
    2 tsp dill weed
    2 tsp garlic powder
    1 pinch turmeric
    1.5 tsp sea salt
    1 tsp black pepper
    1/2 cup filtered water

Directions

1. Heat olive oil in a saucepan over medium heat. Add onion and garlic and saute until translucent.
2. Crumble tofu with your hands and add to the pan. Cook for 2 minutes.
3. Combine the yeast, dill, garlic powder, turmeric, sea salt and black pepper in a small bowl with just enough water to form a thin sauce. Whisk with a fork to remove all lumps.
4. Pour this mixture onto your tofu and stir frequently. The turmeric will give the tofu a nice golden glow. Cook until all liquid has evaporated. remove from heat.
