Ingredients

    4 tbsp cooking sherry
    12 tbsp butter
    1 small onion minced
    1 cup flour
    3 cans chicken broth (48oz)
    1 cup uncooked wild rice
    1 cup cubed chicken (substitute a pre-cooked rotisserie chicken in deli)
    1 cup carrots finely grated
    1/2 cup slivered almonds
    1 tsp salt
    2 cups heavy whipping cream

Directions

Cook rice for an hour (must pop open) and drain. Set rice aside.

While cooking rice:
Mince Onion - Set Aside
Pull apart chicken (if using rotisserie, it's the easiest and best way)
Chop Carrots
Add Almonds, chicken and carrots into a large bowl.

Once Rice is done:
Melt butter in the large pot on the stove.
Add onion to melted butter and mix.
Cook onion until tender.
Blend in flour to mixture while gradually adding all the broth.
Cook, stirring constantly until mixture comes to a boil.

Boil an additional one minute then stir in rice and salt.
Add almonds, chicken and carrots mixture.

Simmer ingredients for 5 minutes.
Blend in heavy whipping cream and sherry.
Heat to serving temp.

Please don't forget the sherry!

Remember, it always tastes better the next day once all of the ingredients have melded.
