    Okra, 250 grams
    Sunflower Oil, 2 tbsp
Ginger Root, 2.5 cm piece, chopped (or 1 tsp canned minced ginger)
    Turmeric, ground, 1 tsp
Yogurt, plain, whole milk, 150 grams
    Chili powder to taste
    Coconut, grated, 2 tbsp
Cilantro, raw, finely chopped, 1 tbsp
    Water, 2-3 tbsp
    Salt to taste

Remove the tops of the okra and cut them in half lengthways. Heat the oil and fry the turmeric and the ginger for 30 seconds. Add the okra and fry for about 5 minutes. Add the turmeric, ginger and chili powder. Add the water and let it simmer until the okras are tender.
Now add the yogurt, slowly and stirring well. Add the grated coconut. Let it simmer for 5 more minutes.
Move to a serving tray. Add the fresh coriander and sprinkle with a little grated coconut before serving.
Makes 4 1/2 cup servings.
You can eat it with basmati rice and also with some other kind of curry.
