Introduction

One of my favorite breakfasts with a little taste of Greece. One of my favorite breakfasts with a little taste of Greece.
Number of Servings: 1

Ingredients

    Onion
    Fresh spinach
    Egglands Best Brown Eggs
    Feta Cheese
    Salt and Pepper to taste

Directions

1. Chop slice of onion and lightly saute in pan sprayed with cooking spray until soft.
2. Chop spinach and add to onion in pan. Saute until wilted.
3. Scramble eggs lightly, adding a couple of tablespoons of water and salt and pepper to taste. Add to mixture in the pan. Add 1/2 of the cheese to mixture.
4. Cook on medium low without scrambling until bottom is lightly browned.
5. Flip entire mixture to brown other side. Add remaining half of cheese to top of frittata and cover for 2 - 3 minutes. Frittata will puff slightly and will brown on the bottom.
6. Remove from heat and serve immediately.

Makes 1 serving.
