Introduction

I love this recipe (and quiche in general) because it's so easy to mix it up. Change up the type of cheese, add a different vegetable (cooked red or green pepper add some crunch; mushrooms or tomato are also wonderful), use leftover mashed potatoes in lieu of the English muffin. Top with salsa, if you like, or eat as is.

Use 1% or skim milk and low fat cheese if you are trying to watch the amount of fat.

Ingredients

    1 tbsp butter or margarine
    1/2 cup chopped onion
    6 eggs
    1/4 tsp pepper
    2 cups milk
    1 tbsp fresh chives
    2 cups cheddar cheese
    2 1/2 english muffins (crumbled)

Directions

Preheat oven to 400 degrees F. Lightly grease a 12-cup muffin pan. In a frying pan over medium heat, melt the butter and cook the onion until transparent. Remove from heat.

In a bowl, whisk together eggs and milk until blended. Stir in cheddar cheese and cooked onion until more or less evenly distributed. If you haven't previously crumbled the English muffins, do so over the bowl and stir in. Spoon into muffin pan and bake for 20 minutes. At 2 to 3 little quiches per person, this serves 4-6.
