Ingredients

    Corn Starch, Nonfat Milk, Russet Potatoes, Cauliflower, Chicken Stock (low sodium), 1/2 Med. Yellow Onion, Green Onions 1 large clove garlic, salt, pepper.

Directions

Take about 6 small russet potatoes, peel five of them and dice the other one. Dice one head of cauliflower. Boil the chopped peeled potatoes and cauliflower until tender, and drain. Take the potatoes and cauliflower you boiled and mash them in pot. Add chicken stock, garlic, onions and milk. Then add uncooked diced potatoes. Simmer for 30 mins. Add chopped green onions, light cheddar cheese and/or chopped bacon (calories not included). Makes 10- 1 cup servings.
