    I love this dish my husband makes it all the time But he puts the eggplant on the grill skin and all after piersing holes in it with a knife untl black then he scrapes out the soft eggplant inside and smash it with a fork This is the traditional way of making this dish love love love it - 6/8/10

    Incredible!
    Yummy! I agree with CQAMMAZ comments, as grilling and blackening the skin adds a smoky flavor to the eggplant pulp that makes it all the more flavorful! That's how many of our local Lebanese and other restaurants here make it. Sometimes spelled ghanoosj or ghanoosh etc. - 11/6/16
