Introduction

Add a little zing to roasted potatoes. These are a family favorite that are 'dressy' enough to serve to company. Add a little zing to roasted potatoes. These are a family favorite that are 'dressy' enough to serve to company.

Ingredients

    2 tbsp Olive oil
    2 lb. small red potatoes, quartered
    1 tbsp minced garlic
    1 tsp dried thyme
    1 tsp dried rosemary, crushed
    1/8 tsp nutmeg
    1/4 c. balsamic vinegar
    3/4 tsp salt
    1/4 tsp pepper

Directions

In a large skillet, heat the oil over medium-high heat. Add potatoes and garlic. Toss to combine. Add thyme, rosemary and nutmeg. Toss well. Cook 2-3 minutes until the potatoes are hot.

Place mixture in to a 15-inch baking pan sprayed with cooking spray (Pam). Bake at 400 for 25-30 minutes or until the potatoes are almost tender. Add the vinegar, salt and pepper. Mix well. Return to the oven for 5-10 minutes or until the potatoes are done.
