Ingredients

    1 lb ground beef
    1 c chopped onion
    1 c chopped green pepper
    1 8-ounce cans tomato sauce
    1 12-ounce whole kernel corn, drained
    1/2 c ripe olives chopped
    1 clove garlic
    1 T sugar
    1 tsp salt
    2 to 3 tsps chili powder or more to taste
    dash pepper

    6 oz sharp process cheese, shredded
    3/4 c yellow cornmeal
    1/2 tsp salt
    2 c cold water
    1 T butter

Directions

Cook meat, onion and pepper in a large skillet till meat is lightly browned and vegetables are tender. Drain. Stir in tomato sauce, corn, olives, garlic, sugar, salt, and chili powder and simmer 20 to 25 min or until thick. Add cheese and stir until melted. Turn into round casserole dish.
Make Cornmeal Topper: Stir cornmeal and 1/2 tsp salt into cold water. Cook and stir till thick. Add butter and mis well. Spoon over hot meat mixture.
Bake in over 375 degrees about 30 to 40 min. 6 servings

    We've used this recipe for years in my family. The only difference is that we use chopped green olives instead of black olives. - 6/11/11
