Introduction

Ingredients

    Calorie-free olive oil spray
    1 lb ground turkey breast (99% fat free)
    2 cans black beans, drained and rinsed
    1 can hominy, drained and rinsed
    1 can chili beans (pinto)
    1 6oz can tomatoe paste
    1 can diced no salt added tomatoes
    1 4oz can diced green chilis
    1 med. onion
    1 green bell pepper
    1 TB garlic
    Cilantro
    Fat free Greek yogurt, approx 1 TB

Directions

Brown bell pepper, onion, 1-2 TB garlic and ground turkey with a shot of calorie-free olive oil spray. Add beans and hominy, drained. Then tomato paste and canned tomatos and chilis -- not drained. Add enough water to simmer -- about one can. Add approx 1 tsp cumin and 1 TB chilii powder, or to taste. Add 1 tsp salt and 1/2 tsp pepper, or to taste, simmer. Top with chopped cilantro and a dollop of fat free Greek yogurt (add 24 calories to serving for yogurt). Makes ten one cup servings.
