Ingredients

    1 cup dry quinoa, rinsed
    28 oz can stewed tomatoes
    2 cups water
    1 cup frozen corn
    1 large green zucchini, chopped
    1 large red pepper, chopped
    1 8oz pkg white button mushrooms, sliced
    1 can black beans, rinsed
    1/2 tsp onion powder
    1/4 tsp red pepper flakes
    1/4 tsp garlic powder
    1/4 tsp cumin
    6 tbsp grated Parmesan or Romano cheese

Directions

Place quinoa in a large saucepan with 2 cups water and stewed tomatoes. Bring to boil and simmer until liquid is almost absorbed, about 15 minutes. Add in black beans and all veggies and spices. Simmer until veggies are tender. Serve with a sprinkle of grated Parm on top. Play around with different veggies and spices to make it your own! It's hard to mess it up!
