Introduction

Ingredients

    8 oz. soft goat cheese
    1 full bunch of celery
    1 T Butter
    1/4 C Milk
    Spices to taste

Directions

Chop the entire bunch of celery into slices
Braise in 1T butter (or olive oil) in a wok or frying pan until crisp/tender
Remove from heat and stir in the goat cheese along with about 1/4 C nonfat milk
Season with salt, pepper, a touch of VegeSal or Spike if you have it.
Turn into a casserole, sprayed with Pam , preferably not deep, more surface area to bake evenly, very lightly spray top with Pam
Bake 15 minutes at 350
Broil additional 5 minutes to lightly brown top.
Makes 8 servings at 100 cal each

    I've had this recipe with cauliflower instead of celery, and it was melt-in-your-mouth delicious. I'm going to try it with celery next time! - 7/26/10
