    2 Tbsp olive oil
    3 cloves garlic, minced
    1 large onion, peeled and diced
    2 ribs celery, diced
    4 carrots, peeled and sliced
    3 parsnips, peeled and grated
    1 1/4 cups pearl barley
    10 cups chicken stock
    2 bay leaves
    4 large sweet potatoes, peeled and cut into chunks
    3 cups chopped, cooked chicken


Heat a stockpot over medium-high heat and add the olive oil. Add the garlic, onion, celery, and carrots. Saute for 5 minutes. Add the parsnips, barley, stock and bay leaves. Bring to a boil, cover and reduce to medium. Simmer for 25 minutes.

Add the sweet potatoes and chicken. Simmer for 30 minutes longer, or until sweet potatoes are soft. Remove bay leaves and discard.

  • Very Good
    I could only give this 4 stars, because I did tweek it a bit. I added about a teaspoon of fresh ginger with the with the garlic, and added some curry powder and turmeric to the finished soup. Very yummy. - 9/17/17
