Number of Servings: 12

Ingredients

    Chicken Breast, no skin, 12 ounces
    Black Olives, canned (small can), 2 small
    Broccoli, fresh, 1 cup, chopped
    Cauliflower, raw, 1 cup
    Celery, raw, 1 cup, diced
    Garlic, 2 tsp
    Mushrooms, fresh, 1 large baskets
    Onions, raw, 1 cup, chopped
    Green Peppers, 1 cup, chopped
    Summer squash, 1 cup, chopped
    Zucchini, 1 cup, sliced
    Red Peppers, 1 cup, chopped
    Tomato Paste, 1 can (6 oz)
    Beans, black, 1 regular can
    Diced Tomatoes w/ Basil, Garlic, and Oregano regular can
    Balsamic Vinegar, 4 tbsp
    Chicken Sausage (Emeril's), 3 links
    Dry Italian Seasoning Your choice

Directions

Spray large pan with PAM.
Add garlic, chicken and sausage. Sprinkle with dry seasoning.
Cook over medium heat till done, remove meat from pan set aside.
Spray pan with PAM.
Add all vegetables, tomatoes and tomato paste, and vinegar. Add more (to taste) of dry spices as well.
Cook till JUST TENDER, do not over cook. Add meat to the vegetables, mix well

Serve 1 cup of vegetables over Brown Rice or Whole Wheat Pasta.

This will make about 12 servings of 1 cup each.
