Introduction

Ingredients

    1cup Oat Flour
    3/4 cup white flour
    1cup rolled oats
    1 1/2 tsp baking powder
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1/4 tsp sea salt
    3/4 cup sugar
    1 large egg
    1/3 cup olive oil
    aprox 12 tsp your favorite jam - recipie uses smuckers low sugar jam.

Directions

preheat oven to 350 F.

In a large bowl mix flour, spices, powder and oats, set aside.
In a smaller bowl beat the egg,
add the oil and sugar, mix well.
Pour wet items into dry, mix untill dry ingredients are moist.

Spoon mixture into muffin pan - i use mini muffins,
Fill each tin about 1/4 full add jam
add more mixture untill the jam is covered, should be about 3/4 of the muffin cup.

bake in oven for 20-25 min on 350F.
Cool and enjoy!
