Ingredients

    8 oz. Neufchatel Cheese
    1 Egg
    6 Packets Sweet & Low (or other sugar substitute)
    1 Tbsp. Vanilla Extract

Directions

Preheat oven to 350.
Mix all ingredients in a bowl.
Pour mixture into 6 muffin cups, filling the cups about halfway.
Put in oven for 18-20 mins.
Let cool and enjoy!

    super--a little wet on the bottom so I put them on paper towels to cool. I topped 2 them with mini chocolate chips, 8 on each muffin. 2 I sprinkled cinnamon &two I placed 6 blue berries on them before baking . these are fun & easy , a nice treat - 12/12/10

    I also tried it with blueberries, chocolate chips and I also used Walden Farms Strawberry preserves. Surprisingly my favorite ones were the blueberry and I'm a chocoholic! This is a MUST try!! - 3/6/11
