Introduction

This dish is tangy, filling, and not at all soupy! Looks and tastes like you spent all afternoon cooking. Ingredients

    3lbs boneless skinless chicken breasts (approximately 8 halves)
    Sea salt and black pepper to taste
    2 packages (2 cups) dry long grain and wild rice
    20 cloves garlic
    1 cup chopped sun-dried tomatoes
    1 cup capers, drained
    1 cup lemon juice
    4 cups water
    1/2 cup extra virgin olive oil

Directions

1) Place chicken breasts in crockpot; salt and pepper to taste.
2) Add rice, garlic, tomatoes and capers.
3) Cover with seasoning mix from long-grain rice.
4) Combine lemon juice, water, and oil in separate bowl; pour over chicken.
5) Turn to coat all ingredients.
6) Cook on low 8 hours.

Makes 8 servings.
