I found a similar recipe when I started my weight loss program and tweeked it to my liking. Ingredients

    6 med tomatoes
    1 lrg cucumber - diced (peeled or not, your preference)
    1/2 cup green onions - diced
    4 cups shredded red cabbage
    1/4 cup (or more, I like lots) chopped cilantro
    1 tsp olive oil
    2 tsp lemon or lime juice
    1/4 cup balsamic vinegar
    1/2 tsp salt ( or to taste)
    1 1/2 tsp black pepper
    2 Tbsp ground cumin

Directions

chop tomatoes and toss with cucumbers, cabbage, green onions, cilantro and cumin. In separate bowl mix together the rest of the ingredients, and pour over tomato mixture. Toss, chill and serve.
Can incorporate other low or no calorie spices, make it to your taste!
If you like your slaw a little creamier, try adding a little plain low fat yogurt, mayo, or sour cream.

    Very Good
    This slaw is great - very tasty! - and very versatile. I made a batch of it a week ago to pair with some shrimp tacos and though it keeps well, I still have leftovers. A half batch would be MORE than plenty for dinner for four - the serving size is very generous, even as a salad. - 5/17/10
