Ingredients

    2 english cucumbers, diced
    3 cups diced roma tomatoes (3-4 tomatoes)
    1.5 cups feta cheese ( I use variety seasoned with basil and
    sun dried tomato)
    1 cup sliced black olives
    6 pieces sun dried tomatoes (in jar with olive oil) diced, oil
    reserved to drizzle on salad
    1/2 small red onion, diced

Directions

Toss all ingredients. Cover and chill until ready to serve. Makes about 16 servings, 1/2 cup each.
